Lobster Terrine

Lobster TerrineYield: 10 portions

Ingredients:

  • 600g lobster
  • Zest of 1 lemon
  • Garlic to taste
  • Olive oil to taste
  • Activa
  • Salt and pepper

Methods:

  1. Marinate lobster with lemon zest, olive oil and activa. Season.
  2. Seal in Cryovac bag.
  3. Cool for 10 minutes.
  4. Let rest at room temperature for 10 minutes.
  5. Cook in circulator at 54 celius for 33 minutes.
