Junior Culinary Team Canada Wins Two Silver Medals

It's all over; the awards were handed out Wed. Oct. 10th at the World Culinary Olympics in Erfurt, Germany. The junior team got a silver medal for the cold competition and silver in the hot competition, the overall winner was Sweden.
Overall it has been a great experience for this young team from Vancouver, all students and alumni of Vancouver Community College. In these past two years they learned a lot more than just competing at the highest level. It has been great watching them come together as a team, learn from well experienced managers, coaches and mentors, gain skills that make them the envy of every young chef out there. It has been an unforgettable journey for these young chefs as they continue on in their careers and become the great chefs that they all can be.
In the next few months we will have at least four more video features to show you, that will go into more detail about all the work that went in to competing at the World Culinary Olympics.
WCO Update: The Hot Competition

The team started at 7am together with six other countries preparing a vegetarian appetizer and sea food main course. Cheered on by a great Canadian contingent with flags, painted faces and lots of enthusiasm.
The team got behind, a challenge with the tofu, the milk that the team brought soured and a successful European brand was not available on a Sunday when most stores are closed in Erfurt.
Despite numerous unsuccessful attempts, an integral component was omitted from the appetizer.
Undaunted, the team persevered and provided the sold out dining room with 90 portions of their beautiful appetizer (minus the agadashi tofu) and main course.

WCO Update: The Cold Program

After 23 hours of working non-stop on their cold show platter, plates, pastries and show piece, they are done. This cold show display is the first component of the World Culinary Olympics here in Erfurt, Germany. It is real food that has to be glazed in aspic because it has to be on display for the entire day. Real food that can be consumed when not glazed. The judges look for creativity, balance, nutritional value and modern cooking technics.
In just a few short minutes the junior team will be loading the truck and taxis for the 10 minute drive to the Messe, Erfurt where the Culinary Competition is happening. I am looking into the eyes of the team members, manager, coach and support members and see anxiety in their eyes as they worry about some of the more delicate pieces that have to be held in the hands and laps of everyone for the entire drive to the show. No one wants to be the one to break or damage a piece.
Upon arrival at the show the Team Manager and Junior Members will set up the Cold Table display. They have to be done with the set up by 7:00am then it is left to the judges to decide who will receive top honors in this category. Stay tuned - the results will be announced on Wednesday.
